Soba Noodle Salad

During the hot summer days in Melbourne, I was searching high and low for a beautiful filling, healthy salad and I came across this soba noodle salad. It was not too heavy and the sauce that goes with it is delicious!

I have the recipe that I have used to make this below but don’t be fooled. This recipe can be altered. If one of the toppings isn’t to your liking you can always just add something else that tickles your fancy.
The sauce is easy to put together. I find with the grated ginger, I like to put left over ginger in the freezer when I’m not using it. I can easily take it out and grate the frozen ginger and it does the trick! Easy!

Recipe

Soba Noodles
Smoked Salmon/Fresh Salmon (sliced)
Canned corn
Seaweed
Cucumber (sliced)

Sauce
3 tbsp Soy Sauce
3 tbsp Rice Vinegar
2 tbsp Sesame oil
1 tbsp Sugar
1 tsp Grated Ginger

1. Cook the noodles as stated on the packet.
2. Combine all the ingredients for the sauce together and give it a good mix.
3. Place the noodles in a bowl and combine the remaining ingredients on top. Drizzle the sauce over the noodles and mix it altogether.
4. Enjoy!
