Basic, quick pizza
One small clove of garlic
A few sprigs of basil plus extra basil leaves to place onto pizza
Splash of red wine vinegar
Dash of olive oil
– For the tomato paste, blend in about half a can of tinned tomatoes with the garlic, salt/pepper, dash of olive oil and splash of red wine vinegar
– Once the tomato paste is done, smear it over the pita bread and top it with sliced tomato, basil leaves and buffalo mozzarella.
– Place in oven at approximately 180 degrees for about 10-15 minutes or until the cheese is melted.
– Once done take out of oven, cut up and serve.
This easy pizza recipe can be used with plenty of other types of toppings. We just stuck with this one because it’s easy and healthy.
Also with the tomato paste, if you can’t be bothered making the paste yourself a simple tomato paste out of a can/jar is good enough. This paste is somewhat runny but if you put more tomato in without the juices it should thicken up.
** We have tried this with lamb and some tzatziki (Greek yoghurt if you want a healthier version). We have also had left over sausages in the fridge so we cooked them on the BBQ, sliced them up to place on the pizza with some mozzarella cheese and some chilli flakes.
